Not sure why you are getting hung up on Cajun/Creole food. That's not really a food style that is done with much credibility outside Louisiana and other areas in the Gulf coast states. Jambalaya is pretty much the only dish from that cuisine that is particularly widespread outside that area (and it's almost always pretty weak, anyway).
