I'd categorize JA as a band that never knew what their 15 best songs were (or even what kinds of styles they're good at), so it makes sense that their setlists were diverse. They also had a lot of different singers and songwriters to appease (and different musical personalities - I imagine Slick's ideal concert and Kaukonen/Casady's would be very different).
I'm with you on the frustration more or less - I have very little interest in the covers and would like to hear more of the Sell Out material live, although I'm guessing it wouldn't be immensely interesting.
