Trying to catch up…

The US growers in places like Florida and Texas
pick the tomatoes while they’re still bright green
and very hard. They are then turned to a pink by
spending a few days chilling in a room filled with
an ethylene compound, which is a gas, and also
the reason I still continue to grow my own using
Grandfather Vac’s cracked-window, masking-tape
greenhouse technique to start seedlings as soon
as the snow begins to melt -
