That's a good choice for Mondays. For 35 years I detested Mondays because I had to start a new week in the manic business world. Traffic was horrendous and people were in grouchy moods. Now, Monday is my favorite day of the week. It's my day to completely relax and I cook only if I want to...a reward to myself for those 35 years of "just another manic Monday." LOL
