I had extra time on my hands this morning so made an Egg, Sausage and Cheese Casserole. It also has bell pepper and onion added in I kept enough out for a couple of days and froze the rest in individual Servings.

I have never had a casserole like that before. I always like my eggs with a yolk.

I get that. You want to taste that yoke (and white)...not have it mixed in with so many other ingredients you can't even tell it's there. Yokes make a good dipping sauce, too.
