I might not eat those today cuz I have two Earl Campbells left, and I really need to breakdown my prepper pile. I also realize I am a can't help myself cookaholic.

There's not a thing wrong with that, Chef WIN-WIN. One good reason (for starters) Is that you're not a leftist protestor out in the street acting the fool. "In the Kitchen" is a good thing - you have lot's of peers. Amen.

I have an idea in my head
hot pan frying to brown the skin
then braising in the oven with salsa
then broiling to bring the skin back to crispy

Sounds very good to me. I like skins pulled from breasts and thighs, seasoned with dry Ranch mix and cooked in hot oil. Good stuff.
