Shrimp and Corn Chowder with Bacon sounds great for a cold, winter day (and for all you tropical weather dwellers, too.)

I don't mind over cooked shrimp one bit, in fact, I prefer it.

Then you could put them back in the hot Chowder or just don't take them out to start with and let them cook away instead of adding them to your bowl. I've had rubbery shrimp and scallops that were awful. For me, it's like a steak, not overcooking it is imperative for good taste/texture.
