EASY STUFFED POBLANOS
1/2 lb. Italian turkey sausage links, casings removed 1/2 lb. lean ground beef (90% lean) 1 pkg. (8.8 oz.) ready-to-serve Spanish rice* 4 large Poblano peppers 1 cup enchilada sauce 1/2 cup Mexican cheese blend** ---minced fresh cilantro, optional
1. Preheat broiler. In a skillet, cook turkey and beef over medium heat until no longer pink. Prepare the rice according to package directions. Add rice to the meat mixture. 3.Cut ers in half lengthwise, remove the seeds. Place on a foil-lined 15×10×1 in. baking pan, cut side down. Broil 4 in.he from heat until skins blister, about 5 minutes. Remove from oven and turn peppers over with tongs.*** 4.Fill with turkey mixture, top with enchilada sauce and sprinkle with cheese. Bake until the cheese is melted. Top with cilantro if desire.
*IMO, the ready-to-serve rices are awful Personally, I'm going to cook a box of Spanish Rice-A-Roni instead...personal choice. **Adding a couple of dollops of cream cheese would be a nice flavorful plus to this.
This time it's not me. The dang thing kept freezing up on me and when I finally thought I had completed it all correctly and hit "Post" , I got a notice that said "Cannot currently receive new posts." Then, when I click back to the page I see this mess that I had spent copious minutes correcting. GRrrrrr
