Servings: 2 sandwiches
4 slices thick sliced bread (such as Sara Lee® Artesano™)
2 tablespoons butter
4 ounces brie cheese, sliced
1/2 cup blueberries (or blackberries or strawberries)
2 ounces sharp cheddar cheese, sliced (optional)
Heat a skillet over medium heat.
Butter one side of each bread slice. Place two slices butter-side down in the skillet.
Top each slice with brie cheese.
Add berries and optional cheddar cheese over the brie.
Top with remaining bread slices, butter side facing out.
Cook for 3–4 minutes per side until the bread is golden brown and the cheese is melted.

You can substitute the berries with thinly sliced peaches, pears, or apples.
Add 2 oz of prosciutto or thinly shaved ham for a savory touch.
Best enjoyed immediately while warm and melty.
