This is a recipe for low sugar root beer
made using a Sodastream system for carbonation.
I find that Stevia has a bit of an aftertaste.
But if you can tolerate a small amount of sugar,
the sugar seems to hide this aftertaste pretty well.
Root Beer Syrup:
(Makes 6 liters)
3 Tablespoons Zatarains Root Beer extract
(Zatarains no longer available, use a substitute.
Follow instructions for the extract used.)
3 Tablespoons cane sugar simple syrup (Le Sirop de Monin or equiv.)
3 Teaspoons liquid Stevia (Now Foods Better Stevia or equiv.)
Add filtered water to make a total of 720 ml
(For each liter use 120 ml per liter of carbonated water)
Save syrup in refrigerator in a 750 ml bottle.
For a stronger root beer taste add more extract.
For a sweeter drink add more Stevia.
For lower sugar reduce the cane sugar syrup.
To make with Sodastream:
For more fizz when carbonating, use more CO2.
Pour off about 100 ml of the carbonated water.
Add 120 ml of the "syrup" to each liter bottle,
then pour back some of the carbonated water slowly.
Makes 6 bottles about a liter each.
(1 liter comes up to the base of the neck of a Sodastream bottle.)
