Atlas Extra Virgin Olive Oil
Vidalia Onion

NY Cheddar Cheese, grated

Trader Joe's Everyday Seasoning
Stir eggs, add Trader Joe's Everyday Seasoning, salt and olive oil to taste.
Put in one side of Cuisinart double interlocking skillet on low heat and continuously fluff up the cooking egg mix.
In the meantime, sauté diced onions and add chopped tomatoes and stew until saucy.
Flip 3/4 cooked omelet to other half of interlocking skillet and continue heating on low heat. On one side, add the onion/tomato mix, spinach and grated cheese, and fold the other side on top of the ingredients. Cover and continue on very low heat to wilt the spinach and melt the cheese.
Guacamole:
1 Avocado
1 garlic clove crushed
A bit of olive oil
Pink Himalayan salt
A small sprinkle of cayenne
About 10 drops of lime juice
Smush into a paste with a fork. Then, sprinkle lime juice over the guacamole to keep it from turning brown.
Cut omelet in half and serve on pre-warmed plates with a topping of On the Border Mild Salsa.
Drink of your choice.
