Do you bottle your beer or keg it. I found generally that kegged brew was smoother, try cutting down the amount of sugar in your bottle to prime it. But remember that Newcastle brown always produced a canny head so it is the nature of the brew. Stout is pretty lively too. I used to enjoy making porter, stoutish in flavour but with the density of a beer. Good luck with future brews and give me a shout if your not sure, but check online there's some great advice sites
