Olive oil isn't particularly good to cook with as it has a low smoking point, if it gets too hot it goes bitter, if you have to cook with oil Rapeseed oil has the highest smoking point,so will be better to seal the food as it hits the pan, I use virgin olive oil for dressings, breads and adding flavour to Mediterranean cooking .
