It works with raspberries, blackberries or blackcurrants, we add either edible quality lavender or use lavender teabags and make an infusion to add to the jam during the cooking, some people use lavender extract but I have never used it in jam. I'll add some vanilla and lime juice for the pectin along with some grated lime zest and obviously sugar. Hopefully we'll have something nice to put on scones.
