(CIANBELLALTO)
FIRST GROUP (oil mixture):
1 tablespoon vegetable shortening
1 cup sugar
3 eggs
1 cup milk
1/4 cup vegetable oil
SECOND GROUP (flour mixture):
2 3/4 cups flour
3 teaspoons baking powder
1 teaspoon anise extract
1 teaspoon lemon extract
1 teaspoon anise seed
THIRD GROUP:
mixed candied fruit
1/3 sugar
1/2 tsp. cinnamon
Preheat oven to 350°F.
FIRST: Mix ingredients in order given, in first group.
SECOND: In a separate bowl, mix ingredients in second group.
Alternately combine oil mixture (FIRST GROUP) with flour mixture (SECOND GROUP) to make a batter.
THIRD: Stir the mixed candied fruit into the batter.
Turn the batter out into a well greased and lightly floured tube pan.
Sprinkle the top of the batter lightly with a mixture of the sugar and cinnamon.
Bake for 45 to 50 minutes or until a toothpick inserted in center of cake comes out clean.
Let cool in pan for 5 minutes; run a butter knife around edges of pan to free the cake and remove from pan to a serving stand. Dust top lightly with powdered sugar.
