EVE CAKE)
This is a beautiful cake to make and serve on New Years eve - according to Greek custom - there is a gold or silver coin that is inserted into the cake - and whoever gets the piece of cake that contains the coin will have good luck for the whole year.
Traditionally the first slice is cut for St. Basil in Greek tradition or it is cut for Christ - the second slice is given to the father of the household, and the remaining slices are given to the rest of the family - starting with the mother then oldest child and so on....
1 cup (2 sticks) butter, softened
2 cups white sugar
3 cups all-purpose flour
6 eggs
1 1/2 tsp. baking powder
1 cup milk (heated for 20 seconds in microwave)
1/2 tsp. baking soda
1 tbsp. fresh lemon juice
1 tsp. lemon peel (optional)
a gold or silver coin (that is inserted after baking)
TOPPING:
1/4 cup blanched slivered almonds
1/4 cup white sugar
Preheat oven to 350°F.
In a bowl, beat butter and sugar together until creamy. Add flour and mix. Add eggs one by one, mixing after each egg is added.
Add baking powder to the warm milk and then add to flour mixture, blending well.
In a separate bowl now mix the baking soda and lemon juice, add to flour mixture and stir well.
Pour cake batter into a greased 10-inch round pan and bake in preheated 350°F for 20 minutes.
Note: You can also beat an extra egg and brush lightly on top before baking to give it a nice brown color.
Sprinkle nuts and sugar on top of cake and bake at 350°F for approximately 30 minutes more, until cake is done.
Note: Some methods tell you to insert a gold or silver coin inside the cake while baking - I personally just insert the coin AFTER baking. If you choose to bake the coin wrap the coin in foil first.
Cool on a rack for about 10 minutes and serve!
