Why do Jews only eat the front part of a cow?

I don’t understand the reasoning for that

That is sad, because the hind quarter has all the best cuts.

Round is too tough, dry and rather tasteless. Regular sirloin cuts are OK if well-marbled. I am not real fond of the rest.

A burger made from top-grade 10-15% fat chuck is almost as good as any cut. I periodically grind several large USDA Choice chuck roasts with my Kitchen-Aid and freeze 8-oz patties in heavy 4 mil bags with my FoodSaver GameSaver for future use. I always save out one fresh set for that evening meal. Mmmmmmmm!

I watched a beef prepared for kosher . The man was a Rabi and used a special knife . They checked to make sure the lung wasn’t connected to the rid cage . He counted so many rids back and kept the front part of cow only . The rest of the cow was sold it wasn’t wasted.

I asked why the Jewish people didn’t eat the back part of a cow.
The back part of the cow is sold to other religions or people who don’t care to eat the back part of the cow.
