6 medium sweet potatoes
2 cups sugar
1 cup hot water
1 tsp. cinnamon
1 tbsp. lemon juice
1/2 cup (1 stick) butter
1 tsp. salt
Peel and slice potatoes 1/3-inch thick and place in greased baking dish. Make a syrup of sugar, water, cinnamon and lemon juice, cooking about 8 minutes. Add butter and salt and pour over potatoes. Bake at 350°F until potatoes are tender.
Variation: Very small whole potatoes may be used.
