Sliced up a couple kielbasas (I like to add a spicy with a regular) and started them in a skillet.
Sliced red onion and bell peppers (mix of colors and varieties.
Added some canned diced tomatoes (I prefer spicy YMMV) and some canned green chillies.
Minced garlic
Spices - I think I use salt, pepper, paprika, red pepper flakes
A can of coconut milk.

My kids (and all of us) love this dish full o roasted potatoes and sausages...born outta making dinner with minimal shit in the fridge one night.
1. Cut some small roaster potatoes in half and parboil them.
2. Cut a yellow (or white) onion into quarters and then into half inch wide chunks.
3. Chop up some peppers similarly.
4. Cut up whatever sausage you have into bites. I usually have like kielbasa or hot link or something around.
Throw it all together and toss with olive oil, salt and pepper. Dump into a roasting tray and nestle a few sprigs of rosemary in there.
Toss it into a 425 oven until the stuff on the top starts to get a crisp and then spoon into a bowl. Top with whatever condiment you prefer.
My kids fucking love it. It's just a big sausage potato roast-ey thing.
