Yes, that's dry process/natural process
Coffee is like wine or beer at this point, where the flavors they can elicit from beans vary from really funky to citrusy to fruity. There's the standard "blueberry bomb" dry process East African. But there are now coferments and fermentation tricks and it's really all over the place. Some gets too funky for me. But I seek a salted lime/ bright acidic flavor in what I drink. Typically very light roast (nordic almost). And my pourover methods and grinder are focused on trying to get that or a more tea like flavor from the high end gesha varietals.  Previous Message ...maybe I'm using the term wrong. But coffee tried within the fruit / cascara. I tried a few in Hawaii and I've tried a few in San Francisco. Super different. I enjoyed trying them the few times I've had them but I think the presence of the fruit almost pushes the flavor off of what my brain associates with "coffee". Like my feeling was "I think I like this but I'm not sure if it's because it tastes so different or if I actually enjoy it". Anyway, what are your thoughts on this process? I also couldn't help but think "natural wine" would be a similar comparison.  Previous Message  Previous Message Having trouble finding anything I enjoy.
