Even then, the lack of documentation hurts when you get into litigation (if you want to go that far). At that point, it's he-said, she-said. You could win given there are no documented change orders, but you might have to perjure yourself to do it. You'll be asked by defense counsel if you verbally authorized certain work, and when that can of worms is opened, it just comes down to versions of a story, and you'll end up settling for more than you bargained for, plus paying counsel.
You could argue over it with the contractor and see if he'll back off, and maybe you end up splitting the baby with him.
