You have to consider that the people who bring those kind of quantities of coffee to the exchange usually know what they are doing (it’s huge long quantities we’re talking about). Before shipping the coffee they are sharp quality control on each lot. Also, the goal is to deliver the « worst » possible quality to the exchange (worst will be the cheapest to buy, in order to maximize the profit on lots that pass).
So, most of the time, coffee that doesn’t pass is very similar to the one that does (within a same shipment). Sometimes coffee doesn’t pass because there was 1 defect to many when graders looked at the sample. If you appeal and another sample gets sent, odds are not negligible to get coffee approved with the new sample. At least that’s my experience.
Now regarding certified coffee being undervalued, only time will tell.
