Have you heard any Gil Evans? He's best known for Miles Davis' Sketches of Spain, which features an adaptation of the slow movement to Joaquín Rodrigo's Concierto de Aranjuez. I've also heard Miles Ahead, as well as several albums of Gil as leader. There's more of a focus on composition and arrangement than in typical jazz.
I'm not nearly as knowledgeable about jazz as several people here, but I'm glad there's something you like.
I'll listen to the Große Fuge presentation sometime, I promise! I'm just not that into videos and can put off viewing them for weeks, especially headier stuff like this. This kind of musical analysis is hard to get in any depth in print.
