I remember really liking Hatchet as well as Canyons and a couple others when I was a kid. Canyons is about a kid trying to return a dead Indian boy's skull to its burial place in the wilderness and it flips back and forth between the present day and the 19th century with two different narrative tones and I thought that was fairly ambitious for a kids' book.
Hatchet, I remember a lot of--the kid swimming down to the crashed plane to get the supplies that will save his life and he encounters the dead pilot's body floating in the water all eaten away by fish. I also liked his attempts at hunting and that his shelter gets destroyed by a tornado.
