For the states I've lived in, a lobster roll for Connecticut is probably fair enough, though I'm not a lobster fan and am not from a part of the state that's particularly seafood-oriented. I would have gone with bacon-egg-and-cheese for New York but pastrami on rye is certainly a fair choice. No arguments with Italian beef for Illinois, but French dip is a weird one for California - I can't recall ever seeing one on a menu here (in fact Illinois is the only place I've ever gotten one regularly).
