Personally, I notice the balance of flavors first. If the seasoning works well with the meat and nothing feels overpowering, that's usually a good sign. A few weeks ago I picked up some sausages from a local butcher for a family lunch. They weren't fancy, but the texture and freshness were excellent. For me, quality ingredients make a bigger difference than unusual flavor combinations. When everything tastes natural, I tend to remember it.
