i couldn't think of anything easy to make for dinner the other night so I looked through the fridge and came up with a sandwich that ended up being quite tasty. I shredded some leftover chicken breasts, added typical Mexican seasonings (cumin, garlic, s & p) a little Tajin, mixed a tiny bit of mayo with a small amount of salsa, added some pepper jack cheese, put it in half of an herb and cheese baguette I had made, wrapped it in foil and baked it until all was heated through. Rob loved it! Hope I remember what I did.
