My J-girl makes 2 of them for my birthday and again for mother's day for me. One just for me each time and one to share.

Luckily, eggs are not TOO bad here if shopping in the right places or going directly to family farms to buy, which there are a TON of in this area.

My MiL used to love strawberry shortcake with a light pound cake. If eggs are just too much there, check that out. The pound cake holds up well with the wet strawberries and whipped cream, just like angel food cake does.
