Top notch. No question---that's a perfectly done cook on your roast. It's exactly how I like mine...pink, not red, and moist with no oozing. I'd totally enjoy the entire meal. And double the amount of asparagus, please. I'm all down with that filling. Leftovers gonna' be good, too.
