Smoked Ribeye Roast

I made instant spuds and then pan fried some scoops in a hot cast iron pan with butter. Then I topped them with moz cheese and put it under the broiler.
I sauteed onions in butter and then mixed it with cream cheese. That is the filling with the asparagus.

I thought that was an eye of round roast which comes off the leg of the cow.

You showed it yesterday and it was eye of round. Yeah, I blame THC but it still wins the trophy.

Top notch. No question---that's a perfectly done cook on your roast. It's exactly how I like mine...pink, not red, and moist with no oozing. I'd totally enjoy the entire meal. And double the amount of asparagus, please. I'm all down with that filling. Leftovers gonna' be good, too.

I meant to put more Asparagus in the pic but THC stopped me.

I should have pulled out the meat slicer.
I could have gotten shaved slices.
I didn't want to clean it. Mistake decision.
Next time I will.

I have two exact leftover meals.
The rest went into the freezer for future use.
