Pecan Crusted Red Snapper

This will be my dinner for the next 3 nights. It's covered with a special sauce I make, baked @375° for 20-25 minutes, then removed from the oven and topped with finely chopped pecans mixed w/melted butter and returned to a 400° oven until the pecans have toasted. The snapper was given to me by my cousin from FL who would rather fish than breathe...he only breathes so he won't miss out on fishing. host pictures and share anywhere

I wouldn't know but if true, I have some company on this board...of the male species, no less. Besides, you're showing off something, too, your envy.

I've never had red snapper. It always looked unappealing to me under the butcher's glass. Hope you enjoy it. That picture needs some lemon wedges.

Looks can be deceiving, it's one of my favorite fish, along with flounder. It's all in the cooking and personal preference. I had one piece after I cooked it and let it 'set' for a few minutes, then wrapped it up and put it in the fridge. It was very good but no plating decor. Been feeling under the weather the last couple of days, little appetite, didn't even make any sides...tomorrow.
