That's a nice hunk of meat with a good beefy flavor. Slice it thin when you do it.

My sister bought me a giant beef slicing knife last year. I intend to slice it as thin as possible.

I watched America's Test Kitchen make one the other day. It was perfect. I am quite capable of fuking it up tho.

That's the best one, IMO. Just a suggestion...if you'll give the entire roast a complete rub of either Yellow or Dijon mustard first, you will not be disappointed and the dry rub you use will adhere to the meat better. Plus, it adds so much delicious flavor. Regardless, it's going to make some good meals.

I know you've already put the dry rub on it but it would be worth it if you wanted to redo. If not, next time. In my world, there's no better smell than meat slow-smoking. It makes my mouth water and my stomach growl.

I shall rub stoned ground mustard over the overnight dry rub in the early morning. Wait for it.
