Party Time for the Grad

My friend's granddaughter graduated from high school last night and is having a Luau/pool party tonight with family and friends. They're roasting a whole pig and her granddaughter requested a Pig Pickin' Cake, Upside Down Pineapple Cake and Banana Nut Bread for desserts. My friend asked me to make the Banana Nut Bread. I made three loaves. This one is for display on the table and for the family to have tomorrow. The other two loaves are for tonight. I'm pooped.

I've been to one where we watched them dig it up. There was an entire ceremony around getting the pig out of the ground. That was in Hawaii. The down-home southern men around here love to ice down tubs of beer and spend the day doing their own version.
