If you shop at Trader Joe's, I HIGHLY recommend their soy chorizo.

I'm far from a vegetarian, but yeah, traditional chorizo can be a bit greasy for my tastes when I make it myself.
It has all the flavor, and much less grease. So much flavor that you can't tell it's soy.
