If it's in a place you can't see, that adds an element of worry that might be worth paying an extra $300 to avoid. But you can also perch a WiFi security camera near the junction and look at it for a month or so. PEX is a little different, but using PVC or CPVC works if you don't keep your hot water at scalding temperature.
