the crater is a cool excursion, which may be where you are already going to snorkle.
kihei has a surf school at the public park/beach. And a food truck park with a paia fish market nearby. lots of good places especially south maui fish: https://share.google/MonwJbMq3gOqld8nY
if you plan to do sunrise at haleakala, go the first full day that you're there (easier to get up before getting used to local time).
try to get a spot at the bar at mama's since there's likely not reservations a month out. or go to paia fish house (not the same, but good).
do the road to hana...in fact, try to drive as much of the costal roads as possible. last time we went we got a big truck (only rental left) and that turned out amazing. it was so big that i didn't worry about the delivery trucks on the narrow roads.

Wife won her company's sales reward trip so we'll be there for 7 days in April (10th-17th). We're staying in the Wailea area. We have a morning snorkel scheduled as part of our group activities, and may try to do a whale watching trip, but other than that nothing planned.
