Honestly, I’d never really heard of them. I’ve heard of beef short ribs. I’ve heard of beef chuck. But these looked really good and had nice marbling and were a prime cut for cheap at Costco.
Ima try to smoke them today. I used a dark amaro from my new employer as binder for the rub.
