From 1983 to 2006 I worked for a Taiwanese shipping company in Chicago. Anytime some out of town management might visit they would host a dinner for the staff at a Chinese restaurant. What was interesting was the Taiwanese managers selecting dishes from items not on the everyday regular menu that the average American would be choosing a meal from. This secret menu seemed to be in place at a number of different Chinese restaurants. I always had a good meal no matter what was ordered and was able to amuse and impress my Taiwanese colleagues with my moderate chopstick skills, lol.
