Green beans can be stored for several years without spoiling, but roasted beans are stale more than 2 months after being roasted. Many cafes don't have strict quality standards though and so I expect many or most just used old roasted beans when they reopened.
That said, I would expect that at least the higher end / specialty coffee cafes threw out stale beans. And likely some of the middle tier cafes as well, depending on the length of the lockdown (e.g. Australia this year).
Probably a small impact, but even small impacts can matter in this market.
