Ceramic pans especially are great at first but wear out quickly. Among premium brands, Anolon Advanced and All Clad HA1 are very good. Heard good things on Made In and Misen but have never used them. Among more mainstream/budget brands T-Fal Professional and Tramontina Professional are both great non-stick pans
