I'm fine with Tripe the way the frogs do it (it appears on lots of menus there). Re Trotters; in my working days my French hosts took me to a b***** expensive upmarket restaurant in Paris "Au Pied de Cochon" where it is their specialty. They were OK but I wouldn't have them again. The French waiter however was astonished when an English bloke ordered them thinking that I didn't understand what I was getting.
