I think that’s way too ambitious for only 7 days, especially with a kid.

Pick 2 locations where you can fly into one and out of the other or pick 1 location with multiple day trip options.
Agree that August is not ideal but you may be locked into that for reasons. You’ll have crowds and high prices but not much you can do about that; hopefully you won’t get hit with a heat wave (look for accommodations with AC as that’s not quite a thing like it is in the US).
