cold pan.
buttered bread down.
grate your cheese and stack it on top.
butter the other side of the bread and top.
turn on the head. medium.
start checking after like 3-4 mins. cheese should be mostly melted by then. flip when the bread is like 80-90% of where you want it.
flip. and keep an eye on it. pan is already hot, so the 2nd side goes quickly. flip when done to your liking.
flip it back over to the original side for the final crisping.
