They all have their quiet moments, but also have balls-to-the-wall intensity at times, so would make sense to pace yourself by spacing them out. Breaking Bad is my favorite of those three. Overall the Americans is more consistently good than Fargo, but Fargo is great too and its highs probably trump The Americans'.
The Wire and Mad Men are both fantastic. I like The Wire better but just personal preference - both 5-star shows.
I did not rate Better Call Saul nearly as high as the five shows mentioned above. It's good, but sometimes was a bit of a chore to get through.
I have not watched West Wing.
