We got the chance to buy a culled stag through a friend who works for the forestry commission it was a full beast minus head,it was gutted and lower legs removed, it was just over 16kg, by the time I skinned and prepared it we lost around 6 kg in hide and bone. You have to butcher it yourself and that puts a lot of people off, but it’s common sense, just take your time. The bones were cooked for stock and that was reduced greatly and frozen .0
