there's also stacking racks if you're smoking. I agree with you that I sometimes wish I had more cooking area, but it's fine. As far as fuel source, I cook with lump charcoal (usually get the fancy stuff) mixed with either wood chunks or occasionally wood chips. A little smoke goes a long way when you're smoking. The guy who was tasked with being in charge got way too drunk and he kept opening up the top to show people the pig, significantly increasing the cook time.
